For the Lentil Stew

lentils
rinsed

vegetable or chicken broth

Salt and black pepper to taste

For the Mashed Potatoes

large potatoes
peeled and chopped

butter

milk
Salt and black pepper to taste
Method
Boil potatoes until tender, mash with butter and milk.
Sauté vegetables and garlic in olive oil.
Add lentils, broth, and seasonings, and simmer until lentils are tender.
Serve stew over mashed potatoes.
