Ingredients
  

For the Lentil Stew
  • 1 cup lentils rinsed
  • 1 onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 4 cups vegetable or chicken broth
  • 1 tsp cumin
  • ½ tsp smoked paprika optional
  • Salt and black pepper to taste
  • 2 tbsp olive oil
For the Mashed Potatoes
  • 4 large potatoes peeled and chopped
  • 3 tbsp butter
  • ½ cup milk
  • Salt and black pepper to taste

Method
 

  1. Boil potatoes until tender, mash with butter and milk.
  2. Sauté vegetables and garlic in olive oil.
  3. Add lentils, broth, and seasonings, and simmer until lentils are tender.
  4. Serve stew over mashed potatoes.
