Loaded Nachos

Ingredients
  

For the Beef Mixture:
  • 1 lb ground beef or ground turkey
  • 1 tbsp olive oil
  • 1 packet taco seasoning or 2 tbsp homemade
  • ½ cup water
For the Nachos:
  • 1 large bag tortilla chips about 12 oz
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup black beans drained and rinsed
  • ½ cup corn kernels optional
  • ½ red onion diced
  • 1 large tomato diced
  • 1 jalapeño sliced (optional)
  • ¼ cup sliced black olives optional
For Topping:
  • ½ cup sour cream
  • ½ cup guacamole
  • ½ cup salsa or pico de gallo
  • 2 tbsp fresh cilantro chopped
  • Lime wedges for serving

Method
 

  1. Brown beef with taco seasoning and water.
  2. Spread half the chips on a pan, layer with toppings.
  3. Repeat with second layer for extra loaded nachos.
  4. Bake at 400°F for 8–10 minutes until cheese melts.
  5. Top with fresh toppings and serve immediately.
