Ingredients

For the Chocolate Cookie Crust
  • 2 cups chocolate cookie crumbs such as chocolate sandwich cookies
  • 6 tablespoons melted butter
  • 2 tablespoons sugar
For the Chocolate Filling
  • ½ cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon salt
For the Cream Topping
  • cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
Optional Garnish
  • Chocolate shavings
  • Crushed cookies
  • Chocolate drizzle

Method

  1. Prepare the Crust: Start by combining the chocolate cookie crumbs, melted butter, and sugar in a mixing bowl. Stir until the crumbs are evenly coated and resemble damp sand. Press the mixture firmly into the bottom of a pie pan to form an even crust layer.
  2. Bake the Crust: Place the crust in a preheated oven at 350°F (175°C) and bake for about 8 to 10 minutes. This helps the crust firm up and develop a slightly crisp texture that will hold the pie filling nicely.
  3. Melt the Chocolate and Butter: In a heatproof bowl, melt the butter and chocolate chips together using a microwave or double boiler. Stir gently until the mixture becomes smooth and glossy, creating the rich chocolate base for the filling.
  4. Mix the Filling: Add the sugar, eggs, and vanilla extract into the melted chocolate mixture. Stir slowly until everything blends together smoothly. Then add the flour, cocoa powder, and salt, mixing just until combined.
  5. Bake the Chocolate Layer: Pour the filling over the prepared crust and spread it evenly. Bake the pie for about 20 minutes until the center looks set but still slightly soft. This layer will become rich and fudgy once cooled.
  6. Cool the Pie Completely: Remove the pie from the oven and allow it to cool at room temperature. After it cools slightly, place it in the refrigerator for at least one hour so the filling becomes firm and sliceable.
  7. Prepare the Whipped Cream: In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. The cream should become light, fluffy, and easy to spread across the pie.
  8. Assemble and Garnish: Spread the whipped cream evenly over the chilled pie. Finish by adding chocolate shavings, crushed cookies, or a drizzle of chocolate sauce for a beautiful final touch.
