Moroccan Chicken

Tender chicken thighs simmered in a rich, spiced sauce with olives, lemon, and fresh herbs.

Ingredients
  

For the Chicken and Sauce:
  • 6 chicken thighs
  • 6 cloves garlic minced
  • 1 large onion finely chopped
  • 3 cups chicken stock
  • 6 oz pitted olives
  • 2 lemons juiced
  • 4 tablespoons olive oil
Spices and Seasoning:
  • 1 tablespoon kosher salt
  • Freshly ground black pepper
  • 1 teaspoon garlic powder
  • 3 teaspoons ground ginger
  • 3 teaspoons ground cumin
  • 2 teaspoons sweet paprika
  • 1 teaspoon ground turmeric
  • 1 quarter teaspoon saffron strands
For Thickening and Finish:
  • 6 tablespoons flour
  • Fresh parsley and cilantro chopped

Method
 

  1. Season chicken with spices and salt.
  2. Brown chicken in olive oil and set aside.
  3. Cook onion and garlic, stir in flour, then add stock and saffron.
  4. Return chicken with olives and lemon juice.
  5. Simmer until tender and finish with fresh herbs.
