Ingredients
  

For the Mujadara:
  • 1 cup brown or green lentils
  • 1 cup long grain rice
  • 4 large onions thinly sliced
  • 4 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon cinnamon
  • Salt to taste
  • Black pepper to taste
  • 3 cups water or vegetable broth
Optional Add-ins:
  • Fresh parsley
  • Lemon wedges
  • Caramelized onions for topping
  • Yogurt or tahini sauce
  • A sprinkle of sumac

Method
 

  1. Rinse and simmer lentils until tender.
  2. Caramelize sliced onions in olive oil until golden.
  3. Add rice and spices, stir well, then add lentils and broth.
  4. Cover and cook until the rice becomes tender.
  5. Serve with extra caramelized onions, lemon, and yogurt.
