Ingredients
  

For the Chicken:
  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • ½ cup all-purpose flour for dredging
For the Sauce:
  • 2 tablespoons butter
  • 8 ounces mushrooms sliced (cremini or button)
  • 3 garlic cloves minced
  • 1 cup dry white wine
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
Optional Add-ins:
  • ¼ cup grated Parmesan cheese for extra richness
  • Fresh parsley for garnish
  • A squeeze of lemon juice for brightness

Method
 

  1. Season and dredge chicken in flour. Sear until golden, set aside.
  2. Sauté mushrooms in butter, add garlic.
  3. Deglaze with white wine, stir in broth, Dijon, and thyme.
  4. Add cream, simmer sauce until slightly thickened.
  5. Return chicken, simmer until cooked. Garnish and serve.
