- Heat oil in a large pot and sauté onion until soft. Stir in garlic, vegan meat, tomato paste, and spices, cooking until browned.
- Pour in broth and plant milk, then add pasta. Bring to a boil, reduce to a simmer, and cook uncovered until pasta is tender and most liquid absorbed.
- Stir in nutritional yeast, Dijon, garlic powder, onion powder, soy sauce, and lemon juice until creamy and cheesy.
- Let rest a few minutes before serving, then top with parsley, vegan cheese, or chili flakes.
