Ingredients
  

For the Pasta and Sauce:
  • 12 oz orecchiette pasta
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 2 shallots finely diced
  • 4 garlic cloves minced
  • 1 lb mixed mushrooms cremini, shiitake, or button, sliced
  • 1 tsp fresh thyme leaves plus extra for garnish
  • ½ cup vegetable or chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Cook pasta until al dente, reserve some water, then drain.
  2. Sauté shallots and garlic in olive oil and butter.
  3. Add mushrooms, cook until golden, then stir in thyme.
  4. Pour in broth, then cream, and simmer with Parmesan.
  5. Toss pasta in sauce, adding water if needed.
  6. Garnish with parsley, thyme, and Parmesan.
