Ingredients
  

For the Chicken and Vegetables:
  • 3 chicken breasts boneless skinless cut into small strips
  • 3 tablespoons olive oil
  • 1 large onion sliced
  • ½ medium red bell pepper sliced
  • ½ medium yellow bell pepper sliced
  • 1 cup snow peas
  • 2 tablespoon garlic ginger paste
  • Salt plus black pepper to taste
For the Sauce:
  • 3 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon rice vinegar
  • ¼ cup water
For Garnish:
  • Fresh basil leaves

Method
 

  1. Prepare the Chicken: Chicken strips get seasoned lightly with salt plus black pepper. Everything stays mixed gently so seasoning spreads evenly. This step helps flavor build right from the start.
  2. Heat the Pan: A large pan gets heated over medium heat. Olive oil gets added once the surface feels warm. The oil gets shimmering which signals it is ready for cooking.
  3. Cook the Chicken: Chicken gets placed into the hot pan in a single layer. Stirring stays minimal so light browning can develop. After a few minutes, the chicken turns opaque and cooks through, then gets moved to the side of the pan.
  4. Add Aromatics: Onion slices get added next. They soften slowly while picking up leftover flavor. Garlic ginger paste follows and gets stirred gently until fragrant.
  5. Add Vegetables: Bell peppers plus snow peas get added to the pan. Everything gets tossed together so heat reaches all sides. Vegetables stay slightly crisp for texture.
  6. Build the Sauce: Oyster sauce, soy sauce, dark soy sauce, rice vinegar, plus water get poured in. The sauce bubbles gently and thickens slightly as it coats chicken and vegetables.
  7. Finish and Garnish: Everything gets stirred until glossy and well coated. Fresh basil gets sprinkled on top right before serving for a fresh finish.
