Ingredients

  • 2 lbs baby potatoes or small gold potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
For the Pesto Yogurt Sauce:
  • ½ cup Greek yogurt
  • 3 tbsp basil pesto store-bought or homemade
  • 1 tbsp lemon juice
  • 1 tsp honey optional for balance
  • Salt and pepper to taste
Optional Toppings:
  • Fresh basil leaves
  • Grated parmesan
  • Toasted pine nuts
  • Lemon zest

Method
 

  1. Boil potatoes until fork-tender.
  2. Smash gently and season with oil and spices.
