Rustic Chicken Cacciatore with Tomatoes and Herbs

Tender chicken thighs simmered in a rich tomato sauce with vegetables, olives, and fresh herbs.

Ingredients
  

For the Chicken and Vegetables:
  • 3 tablespoons olive oil divided
  • 6 bone in skinless chicken thighs
  • Salt and pepper to season
  • 1 medium onion diced
  • 2 tablespoons garlic minced
  • 1 small yellow bell pepper diced
  • 1 small red bell pepper diced
  • 1 large carrot peeled and sliced
  • 10 ounces mushrooms sliced
For the Sauce:
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 7 ounces Roma tomatoes halved
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 8 sprigs fresh thyme
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh basil chopped
  • ½ cup pitted black olives
  • 150 ml red wine

Method
 

  1. Season and brown chicken in olive oil.
  2. Cook vegetables and garlic.
  3. Stir in tomato paste and wine.
  4. Add tomatoes, herbs, and olives.
  5. Return chicken and simmer until tender.
  6. Garnish with parsley and serve.
