Ingredients
  

For the Mac & Cheese:
  • 3 cups shredded cooked chicken
  • ½ cup barbecue sauce
  • 12 oz elbow macaroni or pasta of choice
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup Parmesan cheese
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
For Topping (Optional):
  • Extra shredded cheese
  • Crispy bacon bits
  • Chopped green onions
  • Fresh parsley

Method
 

  1. Cook pasta until al dente, drain, and set aside.
  2. Toss shredded chicken with barbecue sauce.
  3. Make cheese sauce with butter, flour, milk, cream, and cheeses.
  4. Stir in pasta and BBQ chicken until fully coated.
  5. Top with cheese, bacon, and parsley if desired, then serve hot.
