Ingredients
  

For the Stew:
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 3 medium carrots sliced
  • 2 celery stalks chopped
  • 1 ½ pounds boneless skinless chicken breasts or thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons all-purpose flour for thickening
For the Dumplings:
  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons butter melted
  • ¾ cup milk
Optional Add-ins:
  • 1 cup frozen peas or corn
  • A pinch of smoked paprika for depth
  • Fresh herbs for garnish

Method
 

  1. Sauté onions, carrots, and celery; add to slow cooker with chicken, broth, and seasonings.
  2. Cook on low for 6–7 hours or high for 3–4 hours.
  3. Mix flour and cream to thicken; shred chicken.
  4. Drop dumpling dough on top, cook 25–30 minutes more.
  5. Serve warm with herbs or bread.
