Ingredients
  

For the Chicken and Potatoes:
  • 4 boneless skinless chicken breasts (or thighs)
  • pounds baby potatoes halved
  • 4 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese
  • ½ cup heavy cream optional for creamier sauce
  • 2 tablespoons olive oil
  • 2 tablespoons chopped parsley for garnish
Optional Add-ins:
  • A squeeze of lemon juice for a fresh finish
  • A sprinkle of red chili flakes for a little heat
  • Fresh thyme or rosemary for added aroma

Method
 

  1. Mix melted butter, garlic, salt, pepper, and Italian seasoning with potatoes.
  2. Place chicken in slow cooker, add potatoes on top, and sprinkle Parmesan.
  3. Cook on low 6–7 hours or high 3–4 hours.
  4. Stir in cream near the end for a creamy sauce.
  5. Garnish with parsley and extra Parmesan before serving.
