Ingredients
  

For the Quesadillas:
  • 4 large flour tortillas whole wheat or regular
  • 6 ounces fresh spinach roughly chopped
  • 1 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 garlic clove minced
  • Salt and black pepper to taste
Optional Add-ins:
  • ½ cup shredded mozzarella or Monterey Jack cheese
  • ¼ cup diced red onion
  • 1 tablespoon fresh herbs like parsley dill, or oregano
  • Chili flakes for heat

Method
 

  1. Sauté garlic and spinach until wilted, season lightly.
  2. Place filling on half of each tortilla with crumbled feta.
  3. Fold tortillas and cook in a skillet until golden and crisp.
  4. Slice into wedges and serve with dips or sides.
