For the Quesadillas:

large flour tortillas
whole wheat or regular

fresh spinach
roughly chopped

crumbled feta cheese

Salt and black pepper to taste
Optional Add-ins:

shredded mozzarella or Monterey Jack cheese

Chili flakes for heat
Method
Sauté garlic and spinach until wilted, season lightly.
Place filling on half of each tortilla with crumbled feta.
Fold tortillas and cook in a skillet until golden and crisp.
Slice into wedges and serve with dips or sides.
