Ingredients
  

For the Spinach Squares:
  • 1 10-ounce package fresh spinach, rinsed and chopped
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 cup milk
  • ½ cup butter melted
  • 1 onion chopped
  • 1 8-ounce package shredded mozzarella cheese
Optional Add-ins:
  • ½ cup Parmesan cheese for extra sharpness
  • 1 teaspoon red pepper flakes for heat
  • Fresh herbs like parsley or dill for brightness

Method
 

  1. Preheat oven to 375°F. Grease a 9x13-inch dish.
  2. Boil spinach 3 minutes, drain well.
  3. Mix flour, salt, baking powder, eggs, milk, and butter. Stir in spinach, onion, and mozzarella.
  4. Pour into dish and bake 30–35 minutes until golden.
  5. Cool slightly, slice into squares, and serve.
