Ingredients
  

For the Potato Salad:
  • 2 pounds baby red or Yukon gold potatoes
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 6 slices cooked bacon crumbled
  • 1 cup shredded sharp cheddar cheese
  • 3 green onions sliced
  • 2 tablespoons fresh parsley chopped
Optional Add-ins:
  • 2 boiled eggs chopped
  • ½ cup diced celery for crunch
  • A pinch of smoked paprika for garnish

Method
 

  1. Boil potatoes until tender, then drain and cool.
  2. Whisk mayo, sour cream, mustard, vinegar, and seasonings.
  3. Toss warm potatoes in the dressing.
  4. Stir in bacon, cheddar, onions, and parsley.
  5. Chill for 1 hour or more before serving.
