Ingredients
  

For the Pie
  • 2 refrigerated pie crusts or homemade, if you have extra
  • 1 cup strawberry jam or preserves
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 egg for egg wash
  • 1 tbsp granulated sugar
For the Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla extract
  • Rainbow sprinkles for topping

Method
 

  1. In a small saucepan, whisk jam, cornstarch, and water. Heat on medium for 2 minutes until slightly thickened. Let cool.
  2. Preheat oven to 375°F (190°C). Roll one crust on a parchment-lined baking sheet. Spread filling, leaving a 1-inch border. Top with the second crust and seal edges with a fork.
  3. Brush the top with beaten egg, sprinkle sugar, and bake for 25–30 minutes until golden. Cool completely.
  4. Whisk powdered sugar, milk, and vanilla into a glaze. Drizzle over the pie and add sprinkles.
  5. Slice into squares or wedges and serve fresh.
