Ingredients
  

For the Chicken:
  • 1 ½ lbs boneless skinless chicken breasts cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp cumin
  • Salt and black pepper to taste
For the Skillet Sauce:
  • 3 cups frozen or fresh corn kernels
  • cup mayonnaise
  • 2 tbsp lime juice
  • ½ cup cotija cheese crumbled
  • ¼ cup chopped fresh cilantro
  • 1 jalapeño sliced (optional, for heat)

Method
 

  1. Season chicken and sear until golden.
  2. Char corn in the same skillet.
  3. Mix in mayo, lime juice, and cotija for the sauce.
  4. Toss chicken back in and coat well.
  5. Garnish with cilantro, jalapeños, and lime.
