Ingredients
  

For Pumpkin Spice Blondies:
  • 1 cup unsalted butter melted and slightly cooled
  • 1 ½ cups brown sugar packed
  • ½ cup granulated sugar
  • 1 cup pumpkin puree not pumpkin pie filling
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
Optional Add-ins:
  • 1 cup chocolate chips dark, milk, or white
  • ½ cup chopped pecans or walnuts
  • ½ cup butterscotch chips
  • 4 oz cream cheese swirled into the batter

Method
 

  1. Preheat oven to 350°F, grease or line 9x13 pan.
  2. Mix melted butter, sugars, pumpkin, eggs, and vanilla.
  3. Whisk dry ingredients: flour, baking powder, baking soda, spices, salt.
  4. Fold dry into wet, stir until combined. Add mix-ins if desired.
  5. Spread batter evenly in pan.
  6. Bake 30–35 minutes until edges are set.
