Ingredients
  

For the Chili:
  • 1 lb Italian sausage mild or spicy, based on preference
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cups corn kernels fresh, frozen, or canned
  • 1 can 15 oz kidney beans, rinsed and drained
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz diced tomatoes
  • 1 cup tomato sauce
  • 1 cup chicken or vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and black pepper to taste
Optional Toppings:
  • Shredded cheddar cheese
  • Fresh cilantro
  • Crushed tortilla chips
  • Sour cream or Greek yogurt

Method
 

  1. Brown sausage in a large pot and set aside.
  2. Sauté onion, peppers, and garlic until soft.
  3. Add seasonings, corn, beans, tomatoes, and sauce; stir well.
  4. Pour in broth, add sausage back, and simmer for 25–30 minutes.
  5. Serve hot with cheese, chips, or sour cream.
