Ingredients
  

For the Pasta:
  • 12 ounces pasta penne, rigatoni, or fusilli work well
  • 1 pound Italian sausage mild, spicy, or mixed
  • 3 large bell peppers red, yellow, and orange, sliced
  • 1 medium onion thinly sliced
  • 4 garlic cloves minced
  • 1 can 14 ounces crushed tomatoes
  • ½ cup chicken broth or pasta water
  • 2 tablespoons olive oil
  • ½ teaspoon red pepper flakes optional
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley chopped for garnish
  • Grated Parmesan cheese for serving
Optional Add-ins:
  • A splash of white wine for deglazing the pan
  • Heavy cream for a creamy twist
  • Spinach or arugula for extra greens
  • Shaved Pecorino Romano instead of Parmesan

Method
 

  1. Cook pasta until al dente, save some water, and drain.
  2. Brown sausage in a skillet and set aside.
  3. Sauté peppers, onions, and garlic until soft.
  4. Add crushed tomatoes, broth, and seasonings; simmer.
  5. Return sausage, add pasta, and toss with sauce.
  6. Garnish with fresh herbs and Parmesan, serve warm.
