Sweet & Sour Chicken

Ingredients
  

For the chicken:
  • 1 lb boneless skinless chicken breast, cut into bite-size chunks
  • ½ tbsp garlic powder
  • ¼ tbsp salt
  • ¼ tsp black pepper
  • ½ cup cornstarch
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • Vegetable oil for frying
For the sauce:
  • ½ cup ketchup
  • ¼ cup rice vinegar
  • ¼ cup brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tablespoons water
For the veggies:
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 cup pineapple chunks fresh or canned, drained

Method
 

  1. Season, coat with cornstarch, egg, and flour.
  2. Cook in hot oil 4–5 minutes until golden.
  3. Simmer ketchup, vinegar, sugar, soy sauce; thicken with cornstarch slurry.
  4. Toss chicken, peppers, pineapple in sauce; serve hot.
