Ingredients
  

For the Chicken:
  • 2 pounds boneless chicken thighs or breasts cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For the Sauce:
  • 1 cup pineapple juice
  • ½ cup bourbon
  • ½ cup brown sugar packed
  • cup soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water slurry
Optional Garnish:
  • Pineapple chunks
  • Sliced green onions
  • Sesame seeds

Method
 

  1. Sear chicken pieces in olive oil until golden.
  2. Mix pineapple juice, bourbon, soy sauce, brown sugar, garlic, and ginger into a sauce.
  3. Pour over chicken and simmer until thickened.
  4. Stir in cornstarch slurry for a glossy glaze.
  5. Garnish with pineapple chunks, green onions, and sesame seeds.
