Ingredients
  

For the Meat and Sauce Base:
  • 1 pound ground beef or Italian sausage for extra flavor
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 jar 24 ounces marinara or pizza sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes optional
  • Salt and black pepper to taste
For the Casserole Layers:
  • 1 bag 32 ounces frozen tater tots, thawed slightly
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup shredded cheddar cheese for extra richness
Optional Toppings:
  • 1 cup pepperoni slices
  • ½ cup sliced bell peppers
  • ½ cup sliced mushrooms
  • ½ cup black olives
  • Fresh parsley for garnish

Method
 

  1. Brown the Meat and Aromatics: Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish. In a large skillet over medium-high heat, cook the ground beef and diced onion until the meat is browned and the onions are soft, breaking up any large clumps with a spoon. Drain any excess grease to keep the casserole from becoming too oily, then stir in the minced garlic and cook for another minute until fragrant.
  2. Prepare the Sauce Mixture: Reduce the heat to low and pour the marinara sauce into the skillet with the meat mixture. Stir in the oregano, basil, red pepper flakes, salt, and pepper, mixing well to combine. Let the sauce simmer for 5–7 minutes, allowing the flavors to meld together and the sauce to thicken slightly, which helps prevent the casserole from becoming watery during baking.
  3. Assemble the Base Layer: Spread half of the meat and sauce mixture evenly across the bottom of the prepared baking dish. Sprinkle half of the mozzarella cheese and half of the cheddar cheese over the sauce, creating a gooey, cheesy layer that will bind the bottom of the casserole together. This double-layer technique ensures every bite has a balance of meat, sauce, and cheese.
  4. Add the Tater Tot Layer: Arrange the tater tots in a single, tight layer over the cheese and meat base, covering the entire surface of the dish. Try to fit them closely together so they crisp up evenly and create a uniform golden crust. If you have any gaps, fill them in with smaller tot pieces to ensure consistent coverage and texture throughout the bake.
  5. Top with Remaining Ingredients: Spoon the remaining meat and sauce mixture over the tater tots, spreading it gently to cover as much surface area as possible without dislodging the tots. Sprinkle the remaining mozzarella, cheddar, and Parmesan cheeses evenly over the top, followed by any additional toppings like pepperoni, bell peppers, or mushrooms for added flavor and visual appeal.
  6. Bake Until Golden and Bubbly: Place the casserole in the preheated oven and bake for 25–30 minutes, or until the tater tots are golden brown and crispy, and the cheese is fully melted and bubbling around the edges. If you want extra-crispy tots, you can broil the casserole for the last 2–3 minutes, keeping a close eye on it to prevent burning.
  7. Rest and Garnish: Remove the casserole from the oven and let it rest for 5–10 minutes before serving. This resting period allows the layers to set slightly, making it easier to cut clean squares without everything sliding apart. Sprinkle with fresh chopped parsley or additional red pepper flakes for a pop of color and freshness.
