Ingredients
  

For the Soup Base:
  • 6 medium russet potatoes peeled and diced
  • 6 slices of bacon chopped
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups whole milk or half-and-half
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
For Toppings:
  • Shredded cheddar cheese
  • Crispy bacon bits
  • Sliced green onions
  • Sour cream

Method
 

  1. Cook bacon until crisp, remove, and set aside.
  2. Sauté onion and garlic in bacon fat.
  3. Add potatoes and broth, simmer until tender.
  4. Whisk flour and milk, then stir into soup.
  5. Blend lightly for texture, stir in cheese and bacon.
  6. Season and serve with toppings.
