  • 13 tbsp unsalted butter softened
  • 3/4 cup caster sugar
  • 3 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 cup cake flour sifted
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 3 tbsp full fat milk

Method
 

  1. Prepare the Oven and Pan: Start by heating the oven to 170°C. Grease a loaf pan well and line it with baking paper. This helps the cake rise evenly and release cleanly after baking.
  2. Cream Butter and Sugar: Add the softened butter and caster sugar to a bowl. Beat until pale and fluffy. This step adds air and sets the texture for the cake.
  3. Add the Eggs Slowly: Crack in one egg at a time and beat well after each addition. This keeps the batter smooth and prevents splitting.
  4. Mix in Vanilla: Pour in the vanilla extract and mix gently. The scent alone starts to hint at how comforting this cake will taste.
