Ingredients
  

For the Butter Beans:
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 cup coconut milk or heavy cream
  • 1 cup sun-dried tomatoes chopped
  • 1 can 15 oz butter beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red chili flakes optional
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 cup fresh basil chopped
Optional Garnishes:
  • Grated Parmesan or vegan cheese
  • Extra chopped basil
  • Crusty bread or toasted baguette slices

Method
 

  1. Sauté onion and garlic in olive oil until fragrant.
  2. Add sun-dried tomatoes and cook 2–3 minutes.
  3. Stir in butter beans, broth, and seasonings.
  4. Simmer covered 10–12 minutes until creamy.
  5. Fold in fresh basil, garnish, and serve warm.
