Ingredients
  

For the Grilled Cheese:
  • 8 slices sourdough or brioche bread
  • 6 tbsp unsalted butter softened
  • 1 cup sharp cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • ½ cup provolone cheese shredded
  • ½ tsp garlic powder optional
For the Tomato Soup:
  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • 3 garlic cloves minced
  • 1 can 28 oz crushed tomatoes
  • 1 cup vegetable broth
  • ½ cup heavy cream
  • 1 tsp sugar
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish
Optional Toppings:
  • Extra shredded cheese
  • Croutons
  • Red pepper flakes
  • Drizzle of olive oil

Method
 

  1. Sauté onions and garlic, then simmer crushed tomatoes with broth and seasoning.
  2. Blend soup until smooth, stir in cream, and keep warm.
  3. Assemble grilled cheese sandwiches with a three-cheese blend.
  4. Cook until the bread is golden and the cheese melts.
  5. Serve hot with tomato soup for dipping.
