Ingredients

  • 3 medium potatoes diced
  • 1 yellow onion diced
  • 1 bell pepper diced
  • 8 oz mushrooms sliced
  • 1 zucchini sliced
  • Optional: fresh parsley or chives chopped
Baking & Spices
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
Oils & Vinegars
  • 2 tbsp cooking oil olive or vegetable

Method
 

  1. Dice potatoes and cook in 1 tbsp oil until golden and crisp.
  2. Sauté onions, mushrooms, bell pepper, and zucchini with spices until tender.
  3. Combine potatoes and vegetables, adjust seasoning, and cook 2–3 minutes more.
  4. Serve warm, garnished with fresh herbs or avocado.
