Ingredients
  

For the Buffalo Chickpea Filling:
  • 1 can chickpeas drained and rinsed
  • 3 to 4 tablespoons buffalo sauce
  • 2 tablespoons vegan mayo
  • 1 tablespoon lemon juice
  • 1 small carrot grated
  • 1 small celery stalk finely chopped
  • 1 small garlic clove minced
  • Salt and pepper to taste
For the Wraps:
  • Large tortillas or wraps
  • Shredded lettuce
  • Sliced avocado
  • Thinly sliced red onion
  • Extra buffalo sauce
  • Vegan ranch for drizzling optional

Method
 

  1. Mash chickpeas in a bowl.
  2. Mix in buffalo sauce, vegan mayo, lemon juice, carrot, celery, and garlic.
  3. Season and stir until creamy.
  4. Add filling to tortillas with lettuce, avocado, and red onion.
  5. Roll into wraps and serve with extra buffalo sauce or vegan ranch.
