Ingredients
  

For the Mashed Potatoes:
  • 6 medium peeled potatoes chopped into even pieces
  • 6 tablespoons vegan butter
  • 2 tablespoons full-fat coconut milk
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • Fresh thyme for garnish optional
For the Caramelized Onions:
  • 1 large yellow onion thinly sliced
  • 2 tablespoons vegan butter or neutral oil
  • Salt & pepper to taste

Method
 

  1. Boil chopped potatoes until tender, then drain.
  2. Caramelize sliced onions slowly in vegan butter or oil.
  3. Mash potatoes with vegan butter, coconut milk, garlic powder, salt, and pepper.
  4. Fold in caramelized onions, reserving some for garnish.
  5. Serve warm with fresh thyme if desired.
