Ingredients
  

Vegetables & Aromatics
  • 1 clove garlic minced
  • 1 small onion diced
  • 1 red bell pepper chopped
  • 1 cup fresh spinach
  • 1/2 cup mushrooms white or brown, sliced
Tofu Mixture
  • 1 pound extra-firm tofu drained and squeezed to remove excess liquid
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon turmeric
  • 1 tablespoon extra-virgin olive oil
  • Pinch of black salt or regular salt
  • Salt and pepper to taste
Topping
  • 35 frozen tater tots
  • 1/2 cup vegan cheddar-style cheese shredded

Method
 

  1. Sauté onion, garlic, mushrooms, bell pepper, and spinach until tender.
  2. Crumble tofu in a bowl, season with turmeric, nutritional yeast, black salt, salt, pepper, and olive oil.
  3. Mix tofu with cooked veggies.
  4. Spread mixture in a greased baking dish and add vegan cheese.
  5. Arrange tater tots on top and bake at 375°F for 35–40 minutes until golden and crisp.
  6. Cool slightly before serving.
