Ingredients
  

For the Sandwiches:
  • 1 medium cucumber thinly sliced (preferably seedless or English cucumber)
  • 8 slices of soft sandwich bread white or whole wheat, crusts removed if desired
  • ½ cup vegan cream cheese plain or flavored or hummus
  • 1 tablespoon fresh dill finely chopped (optional)
  • Salt and black pepper to taste
Optional Add-ins:
  • A squeeze of lemon juice for extra brightness
  • Fresh chives or parsley for garnish
  • Vegan butter for spreading beneath the cream cheese or hummus

Method
 

  1. Slice cucumbers thin and pat dry.
  2. Spread vegan cream cheese or hummus on bread slices.
  3. Arrange cucumbers in a single layer, season lightly.
  4. Top with another bread slice, press gently.
  5. Trim crusts, cut into shapes, and serve.
