Ingredients
  

For the Lentil Filling
  • 2 cups cooked lentils
  • 1 tablespoon olive oil
  • 1 yellow onion chopped
  • 1 celery stalk finely diced
  • 3 garlic cloves minced
  • 1 teaspoon onion flakes
  • 5 sage leaves chopped
  • 2 sprigs fresh thyme
  • ½ teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 1 cup broth
  • Salt and pepper to taste
For Assembly
  • 16 ounces pre made pizza dough
  • ¼ cup cranberry sauce
  • 2 tablespoons vegan butter melted
  • 1 slice vegan Swiss optional
  • ½ cup cashews optional for extra richness
  • 1 cup panko breadcrumbs
  • 1 cup non dairy milk
  • 4 tablespoons flour
  • ¾ teaspoon garlic salt
  • Extra olive oil for brushing

Method
 

  1. Cook lentils with garlic, onion, celery, herbs, tomato paste, and broth until thick.
  2. Roll out pizza dough and spread filling evenly.
  3. Add cranberry sauce, panko, and optional vegan cheese.
  4. Roll into a log, brush with butter and oil, and bake until golden.
  5. Slice and serve warm.
