Ingredients
  

For the Tofu & Veggies:
  • 32 oz firm or extra-firm bean curd tofu, cubed
  • 1 red bell pepper chopped
  • 3 tablespoons spring onion tops sliced
  • 1 clove garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon orange zest
Sauce & Coating:
  • 3 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 3 tablespoons olive oil
  • 1 tablespoon vinegar
  • 3/4 cup orange juice
  • 1/4 cup water

Method
 

  1. Press tofu, cube, and coat with cornstarch and salt.
  2. Cook tofu in olive oil until golden on all sides; remove.
  3. Sauté garlic, ginger, and bell pepper. Mix orange juice, soy sauce, sugar, vinegar, and cornstarch-water; pour into skillet.
  4. Stir sauce until thickened, return tofu, and toss to coat.
  5. Garnish with orange zest and spring onions; serve over cooked rice.
