Vegan Spinach Rolls

Ingredients
  

For the Dough:
  • 3 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 packet 2 1/4 tsp active dry yeast
  • 1 cup warm plant-based milk almond, oat, or soy
  • 2 tbsp olive oil
For the Filling:
  • 2 cups fresh spinach chopped
  • 2 cloves garlic minced
  • 1/4 cup onion finely diced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: 1/4 tsp nutmeg for subtle warmth

Method
 

  1. Prepare dough with flour, yeast, plant milk, olive oil, and salt; let rise 45 minutes.
  2. Sauté spinach, garlic, and onion for filling.
  3. Roll out dough, spread filling, roll up, slice, and place in greased dish.
  4. Let rise 15 minutes, brush with oil, bake at 375°F for 25–30 minutes.
