Vegetarian Chickpea Salad Sandwiches

Ingredients
  

For the Chickpea Salad:
  • 2 cups cooked chickpeas or 1 can, drained and rinsed
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
For the Sandwiches:
  • 8 slices whole-grain or your favorite bread
  • Lettuce leaves or baby spinach
Optional:
  • sliced tomato
  • cucumber
  • avocado

Method
 

  1. Mash chickpeas in a bowl until mostly smooth.
  2. Stir in mayo or yogurt, mustard, lemon juice, garlic powder, salt, and pepper.
  3. Fold in celery, onion, and parsley.
  4. Spread the mixture on bread, top with lettuce and optional veggies, close sandwiches.
  5. Cut and serve with your favorite sides.
