White Chocolate Pumpkin Snickerdoodles

Ingredients
  

For the Snickerdoodles:
  • ½ cup unsalted butter softened
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • cup pumpkin purée
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp cream of tartar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves
  • ½ tsp salt
  • 1 cup white chocolate chips
For the Cinnamon-Sugar Coating:
  • ¼ cup granulated sugar
  • 1 ½ tsp ground cinnamon
Optional Toppings:
  • Extra melted white chocolate drizzle
  • Chopped pecans or walnuts

Method
 

  1. Cream butter, sugars, pumpkin, egg yolk, and vanilla.
  2. Whisk the dry ingredients and fold them into the wet mixture.
  3. Stir in white chocolate chips and chill the dough.
  4. Scoop, roll in cinnamon sugar, and bake 10–12 minutes.
  5. Cool, drizzle with white chocolate if desired, and serve.
