Method
- Brown beef cubes in batches, set aside.
- Sauté onions, celery, and garlic. Stir in tomato paste and flour.
- Deglaze with wine, add beef, stock, herbs, and simmer 1 ½–2 hours.
- Stir in carrots, parsnips, and potatoes; simmer 30–40 minutes.
- Garnish with parsley and serve hot.
