Ingredients
  

For the Stew:
  • 2 pounds beef chuck cut into 1 ½-inch cubes
  • 3 tablespoons olive oil divided
  • 1 large onion diced
  • 3 garlic cloves minced
  • 3 carrots peeled and sliced into thick chunks
  • 2 parsnips peeled and sliced
  • 2 medium potatoes cubed
  • 2 stalks celery chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon flour for thickening
  • 4 cups beef stock
  • 1 cup red wine optional, adds depth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
Optional Add-ins:
  • 1 cup pearl onions peeled
  • 1 cup mushrooms halved
  • Fresh parsley chopped, for garnish

Method
 

  1. Brown beef cubes in batches, set aside.
  2. Sauté onions, celery, and garlic. Stir in tomato paste and flour.
  3. Deglaze with wine, add beef, stock, herbs, and simmer 1 ½–2 hours.
  4. Stir in carrots, parsnips, and potatoes; simmer 30–40 minutes.
  5. Garnish with parsley and serve hot.
