Ingredients
  

For the Chicken Marinade:
  • 2 pounds boneless skinless chicken thighs (or breasts, cut into bite-sized pieces)
  • 1 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • 1 teaspoon salt
For the Sauce:
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 tablespoons tomato paste
  • 1 can 14 ounces crushed tomatoes
  • 1 cup heavy cream or coconut cream for dairy-free
  • 2 tablespoons brown sugar
  • 1 teaspoon garam masala
  • ½ teaspoon ground coriander
  • ½ teaspoon cumin
  • ½ teaspoon salt adjust to taste
  • Fresh cilantro for garnish
Optional Add-ins:
  • A pinch of cayenne for extra heat
  • A drizzle of honey or cream at the end for balance
  • Fresh lime juice before serving for brightness

Method
 

  1. Marinate chicken with yogurt, lemon, garlic, ginger, and spices.
  2. Add chicken, tomatoes, butter, and onions to the crock pot.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Stir in cream and brown sugar, simmer 15 minutes more.
  5. Garnish with cilantro and serve with rice or naan.
