Ingredients
  

For the Chicken:
  • 2 pounds boneless skinless chicken breasts (or thighs)
  • 2 cups salsa verde homemade or store-bought
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • Juice of 1 lime
  • 1 tablespoon olive oil
Optional Add-ins:
  • 1 can black beans drained and rinsed
  • 1 cup frozen corn
  • 1 jalapeño sliced (for extra heat)
  • ½ cup fresh cilantro chopped (for garnish)
  • Shredded cheese or avocado slices for serving

Method
 

  1. Add chicken, onions, garlic, spices, and salsa verde to the crock pot.
  2. Cook on low for 6–7 hours or high for 3–4 hours.
  3. Shred the chicken, stir in lime juice, and serve warm.
