Ingredients
  

For the Bake:
  • lbs sirloin or ribeye steak cut into bite-sized pieces
  • 2 lbs baby potatoes sliced into ¼-inch rounds
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt and black pepper to taste
For the Cheese Layer:
  • 2 cups sharp cheddar cheese shredded
  • cups mozzarella cheese shredded
For the Toppings:
  • 6 slices cooked bacon chopped
  • ½ cup sour cream
  • 3 green onions sliced
  • Fresh parsley chopped (optional)

Method
 

  1. Slice potatoes and steak, dice onion and garlic.
  2. Season and sear the steak for flavor.
  3. Layer potatoes, steak, onions, and cheese in the crockpot.
  4. Slow cook until potatoes are soft and the steak is tender.
  5. Finish with bacon, green onions, and sour cream before serving.
