- Brown ground turkey with olive oil, salt, and pepper.
- Chop pumpkin, carrots, celery, onion, and garlic.
- Add turkey, veggies, broth, tomatoes, and spices to crockpot.
- Cook 6–7 hours on low or 3–4 hours on high.
- Stir in greens or beans if using, remove bay leaf.
