Ingredients
  

For the Napoléon Layers:
  • 6 large eggs
  • 6 slices puff pastry squares or toasted bread slices
  • 1 cup fresh spinach sautéed lightly
  • 1 medium tomato thinly sliced
  • ½ cup mushrooms sautéed
  • ½ cup shredded Gruyère or cheddar cheese
  • 2 tablespoons olive oil or butter
  • Salt and black pepper to taste
Optional Add-ins:
  • Avocado slices
  • Caramelized onions
  • Smoked salmon or ham for extra protein
  • Fresh herbs like basil parsley, or chives
  • A drizzle of hollandaise sauce for serving

Method
 

  1. Bake puff pastry squares or toast bread slices.
  2. Sauté spinach and mushrooms; slice tomatoes.
  3. Bake eggs in ramekins until whites are set.
  4. Assemble layers: pastry, veggies, egg, tomato, cheese.
  5. Bake 5 minutes to melt cheese.
  6. Serve hot with herbs or hollandaise drizzle.
