Ingredients
  

For the Soup Base:
  • 1 tablespoon olive oil
  • 1 pound Italian sausage mild or spicy, depending on preference
  • 1 small onion finely chopped
  • 4 garlic cloves minced
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes optional for heat
  • 2 tablespoons tomato paste
  • 1 can 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 1 cup water
  • 8 –10 lasagna noodles broken into bite-sized pieces
  • Salt and pepper to taste
For the Creamy Finish:
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
For Topping:
  • Ricotta cheese about ½ cup
  • Fresh basil or parsley for garnish

Method
 

  1. Brown sausage with onions and garlic.
  2. Add tomato paste, crushed tomatoes, broth, and water.
  3. Simmer and cook noodles until tender.
  4. Stir in cream, mozzarella, and Parmesan until creamy.
  5. Top with ricotta and fresh herbs before serving.
