Ingredients
  

For the Lentil Bolognese
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 garlic cloves minced
  • 1 cup dried brown or green lentils rinsed
  • 1 can crushed tomatoes
  • 2 tablespoons tomato paste
  • 3 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • 1 tablespoon soy sauce or tamari
  • Salt and pepper to taste
Optional Add Ins
  • Red pepper flakes
  • Nutritional yeast
  • Plant milk for creaminess
  • Fresh basil
  • Mushrooms

Method
 

  1. Sauté onion, carrot, celery, and garlic in olive oil.
  2. Stir in lentils, tomato paste, crushed tomatoes, and soy sauce.
  3. Add broth, herbs, and seasonings and let the pot simmer until thick.
  4. Serve warm with pasta, rice, or bread.
