Ingredients
  

For the Chicken & Carrots
  • 4 bone-in skin-on chicken thighs
  • 1 lb carrots peeled and cut into sticks
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary chopped
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Lemon wedges for serving optional

Method
 

  1. Mix herbs, garlic, and olive oil; rub all over chicken.
  2. Toss carrots in oil and seasonings.
  3. Sear chicken skin-side down until golden.
  4. Roast chicken and carrots at 400°F for 25–30 minutes.
  5. Serve with pan juices and lemon wedges.
