skin-on chicken thighs

carrots
peeled and cut into sticks

olive oil

garlic
minced

fresh parsley
chopped

fresh thyme leaves

fresh rosemary

smoked paprika

Lemon wedges for serving

Method
Mix herbs, garlic, and olive oil; rub all over chicken.
Toss carrots in oil and seasonings.
Sear chicken skin-side down until golden.
Roast chicken and carrots at 400°F for 25–30 minutes.
Serve with pan juices and lemon wedges.
