Ingredients
  

For the Skillet:
  • 1 lb ground beef or ground turkey
  • 2 tbsp olive oil
  • 2 medium sweet potatoes peeled and diced into ½-inch cubes
  • 2 medium zucchini diced
  • 1 small red onion chopped
  • 3 garlic cloves minced
  • ½ cup red bell pepper chopped (optional)
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ¼ tsp crushed red pepper flakes optional
  • Salt and black pepper to taste
For Serving:
  • Fresh parsley or cilantro chopped
  • Shredded cheddar or Monterey Jack cheese optional
  • Lime wedges optional

Method
 

  1. Cook sweet potatoes until slightly softened, set aside.
  2. Brown ground beef, drain excess fat if needed.
  3. Sauté zucchini, onion, garlic, and bell pepper with beef.
  4. Stir in spices and add sweet potatoes back to skillet.
  5. Garnish with parsley or cilantro, add cheese if desired, and serve hot.
