Ina Garten’s Apple Pie Bars

Ingredients
  

For the Crust:
  • 1 cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • Pinch of salt
For the Apple Layer:
  • 4 large apples Granny Smith or Honeycrisp work well, peeled, cored, and thinly sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon lemon juice
For the Streusel Topping:
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter cold and cut into small cubes

Method
 

  1. Preheat oven to 375°F. Line 9x13 pan with parchment.
  2. Make crust: cream butter, sugar, and vanilla. Mix in flour and salt. Press into pan and bake 15–18 minutes.
  3. Toss apples with sugar, spices, and lemon. Spread over crust.
  4. Mix streusel: flour, sugars, cinnamon, salt, and butter until crumbly. Sprinkle over apples.
  5. Bake 35–40 minutes until golden. Cool fully before slicing.
